Geotrichum Candidum (white mould #2) plays a significant role in the ripening process. It greatly influences the appearance, structure and flavour of Brie and Camembert, along with a variety of goat cheeses. 

It also helps prevent the skin from slipping off your cheese. 

In red smear cheeses it helps neutralize the surface of the cheese and stimulates the development of desired, acid-sensitive flora such as Brevibacterium Linens. 

Freeze dried preparation can be inoculated directly into the milk, without rehydration, or be rehydrated and sprayed onto the cheese. However, freeze dried Geotrichum must be reactivated for 16 hours at 4 degrees C before use in a spraymist. 

Included with your mould is a sterile jar for keeping your mould in the freezer. Must be stored in a freezer!

This packet is suitable for 25 litres of milk.
