Learn how to make fabulous Prosciutto, Bacon and Ham with Peter Booth, the author of A Charcuterie Diary the only complete work in Australia on charcuterie production.  The book, published in 2017, recently received an award from ‘Gourmand’ the international cookbook awards.

The demonstration style class will cover how to prepare/butcher a prosciutto, bacon and ham.  The technique for whole muscle charcuterie production of several products will be discussed and demonstrated including speck and kaiserfleisch.  Basic smoking techniques will also be discussed and demonstrated.

Class duration: Approx. 4 hours. 

Comprehensive notes will be provided

You will be spoiled with some delicatessen made during the course and a $20 HMI Voucher to get you started.
