~ End of Salami Season Sale ~

Salami season is slowly grinding to a halt as the days get longer & the temperature gently climbs. We still have plenty of salami stock in store for a last gasp curing run, and need some shelf space for our next seasonal produce lines. So we have slashed 15% off our Salami/Sausage range instore and online. From Casings,to netting, spices, to string & even our fabulous Fabio Leonardi mincers. It's a bargain too good to pass up. ~ Salami All Year Round ? ~

Salami season is over for most of us, but it doesn't have to be ! At our Clayton store we have a secret upstairs, a stainless steel playground for all you DIY foodies. Our demo room is for hire all year round and features three large stainless steel preparation tables, two large Fabio Leonardi electric mincers, two large Fabio Leonardi fillers, a generous double sink wash up area & last but not least a controllable curing cabinet where you can cure your cured goods ALL YEAR ROUND. When it's in the middle of a scorching Melbourne summer, the northerly wind is blasting a 45 degree wind in your face...you can still pop into our Demo room, make some Salami & cure it at 12 degrees if you want to. It's a great spot to gather some friends, family, or even a group from your sports or hobby club to make some foodie magic happen. Your cured meats are all done & you want to show them off, but to get that slice thickness just right is hard sometimes and can take some time. Maybe you are in need of a quality slicer? I've been a busy little squirrel lately, sealing away packets of fresh pungent hops. But these aren't for me, they are for all you brewers out there. We've got full fridges, and don't forget we now carry 1kg bulk hops in 5 of our most popular styles. It's a real saving for your brew wallet!   

All yeast great and small, we have them awaiting your recipes here at Home Make It. Be it a lager, an Ale or even some of our Yeast Bay or White Labs Sour vials for you sour beer fans, we've got something that will make your recipe shine.   

In the last while we have just brewed another batch of our Pale Ale & our IPA wort kits. Made with all fresh ingredients and brewed locally at the lovely Craft & Co in Collingwood, these Fresh Wort Kits produce great all grain beer without the brewing part. A great option for those just getting into home brewing or an experienced brewer short on time.

As winter is wrapping it's frosty tendrils around us, the Home Make It team & all of our customers have been busy wrapping up their own goods to cure. Hours of work & laughter with families around Australia has churned out tonnes of Salami, Sopressa, Pancetta, Capocollo, Bacon and much more. All of different shapes, sizes & flavours, they hang in their neat little rows reminding us of the feasts to come. Now we wait. 

To celebrate this special season, here are a few shots from customers and the Home Make It team of their curing adventures.....

 ~ Cade's Brew News ~ 

Last Saturday we finally got to taste the Red Roar, where Home Make It & the Craft & Co brewed the winner of the Merri Mashers Homebrew club IPA competition on a commercial system. We poured viking Malts, mountains of American hops & blood sweat & tears into the beer & it's a real winner ! It's a testament to collaboration with good brewers, good ingredients & a love for quality beer. Get down to the Craft & Co for a taste, it won't disappoint even the fussiest of beer drinkers. 

We still have our fridges loaded with quality liquid yeasts from the USA, with loads of White Labs & Yeast Bay gracing the shelves. Get in quick while they're fresh ! 

Today we received our stock of the brand spanking new SS Brewtech Brewmaster 50 Litre brewbuckets. They really are a well built piece of brewing kit. On this larger size ( previously only 26 Litre ) they have added more lid clamps & adjustable feet. and at only $495 for a quality stainless steel conical bottomed fermenter it's a great deal.

Salami , Salami , Salami..........and Beer

~ Salami Season ~

 

The Queen's birthday long weekend has just passed & that is the unofficial starting point of the Salami making season. Pigs are running scared & garages all over are being cleared in preparation. Families are weighing out their guarded "secret" recipe to mix with the meat & knives are being sharpened. Here at Home Make It we have you covered for everything except the meat when Salami season rolls around.

During the renovation of our Clayton store last year, we transformed the second floor into a DIY foodie area. The room features three large industrial stainless steel tables, two Fabio Leonardi electric mincers, two large Fabio Leonardi sausage/salami fillers, a large stainless steel wash area & best of all...a programmable curing cabinet. So not only can you come in & take advantage of these facilities, you can cure your Salami ALL YEAR ROUND. Middle of summer, 40 degrees with a hot northerly & you want to make Salami? ~ Darebin Homemade Food & Wine Festival ~ 

From the 29th of May to the 4th of June Darebin was celebrating the art of making your own food & wine & multiculturalism in tandem through the Homemade Food & Wine festival. All through that week, workshops & demos were teaching all sorts of recipes from all over the globe. The Home Make It team converged on the Northcote town hall, installed a Pop up shop & put on some great demos for the Public. Here are a few pictures of our team in action over this great weekend.

Thanks Darebin council for having us, the public for coming along to share in some wonderful homemade goods & all the entrants who entered their goods for judging. As a sponsor of the festival we were very proud to see the turn out & that a fair few winners are regular faces into our stores. Winners sure are grinners !

 

 

 

~ Cade's Brew News ~ 

Home Make It sponsored the recent Merri Mashers Homebrew club IPA competition, and instead of the usual prize of a voucher or a bit of home brewing equipment we decided to do something a tad different. I had a chat with Heath who brews at The Craft & Co, & we decided what better way to reward a winning recipe than to upsize it on their lovely 1000L Italian brewhouse. Julian Robinson's winning Red IPA was on the menu & first up we needed to mill the grain. Home Make it supplied the grain & I was covered head to toe in dust before I'd finished milling over 200kg of our Viking grain.

It was an early kick off, between mashing in & the coffee we had woken up as the sweet smell of brewing started to wafted out. To get the red hue, Julian had opted for a late addition of dark chocolate malt & he worked the mortar & pestle like a pro as he broke the grain down.

Then there's the hops. Being an IPA it's traditionally going to be very hop forward, and this is a real hop monster. So this is not going to be a subtle beer, it's a large beer with an ABV of approximately 7% & hops to shock. So we decided to call it " Red Roar" a beer that wants your attention! Look out for our social media channels for when it's pouring. It's going to be a great beer! 

 

It's always an exciting time when our Yeasty friends from the USA come & visit. Just this week we had a large fresh batch of White Labs come in, so whatever style you want to brew we have you covered. Also in this shipment was another batch of those funky, sour inducing vials from Yeast Bay. Get in quick on these, they really fly out the door.   

 

Everyone loves the iconic SS Brewtech Brew Bucket, 26 litres of stainless conical bottomed homebrew stainless steel. We are very excited to soon see it' bigger brother into store, the 50 Litre Brewbucket. Watch this space & our social media channels for when it hits our shelves.

The Darebin Homemade Food & Wine Festival has kicked off for 2017. Spread up & down the High street hub of Darebin, there are DIY demo's and courses to show you how to make nearly anything you want & things you didn't know you needed. 

Home Make It is a proud sponsor of this wonderful community event & are also hosting three exciting & informative workshops. 

Salami Masterclass

On Sunday the 4th at noon, we team up with James from The Meat Room for a no holds barred Salami Masterclass. We will break down the meat, mince, fill & finally chat about the all important curing process. On top of all this you also get a light meal & a Home Make It Salami & Sausage equipment kit valued at RRP $125.

Introduction to Homemade Wine Making

On Saturday 3rd of June at 11.30 am at the Northcote Town Hall we will be running through the basics of making Vino at home. This is a free event.  

Townhall Brew 

On Saturday 3rd June at 1pm we will be filling the Northcote Town hall with the lovely aromas of malt & hops, as we do a live homebrew. This is a free demo, so please feel free to wander over, watch the process & ask as many questions as you like. Any excuse to talk beer ! 

 

~ Salami Silly Season ~ 

We have a few " Silly Seasons " here at Home Make It. Wine, Passata & the best of all....Salami Season! There is a special buzz that goes through the DIY foodie community when the weather starts to cool down that is hard to describe. Families get together and plan their attack, source meat, spices, argue about recipe's & clear whole weekends on their calendars. Beat the rush & get into store as soon as you can to secure your curing goods. 

Here are some must haves...

Our new Salami & Sausage recipe kits make Salami's that little bit easier. Pre-mixed for 5kg of meat, you can make an array of flavours this year. 

Round end, Tied end, Fresh, Stick or Wrap. These are all forms of casings to hold your curing meat & come in a whole range of different shapes & sizes. 

Along with the meat, possibly the most important ingredient in curing is good old salt. We carry it in 25kg bags, 5kg Coarse salt & 1kg sizes

 

~ Sporting Shooters Convention ~

Last weekend a small Home Make It team converged on the Melbourne Showgrounds for the Shot Expo hosted by the Sporting Shooters Association of Australia. These guys & gals love their shooting sport & in turn putting their spoils on the table to eat. We hosted a small stall & showed the attendees all the ways Home Make It can help them process & store their produce at home. The highlight of the show was meeting new customers obviously, but the Home Make It ladies loved The Snake Hunter as you can see below.

~ Olives Aplenty ~ 

This year's Olive harvest has been one for the ages, with many customers coming in with an unusual problem..too many Olives ! Now this is one of those " good problems ", but one that needs to be solved none the less. If you have this issue, come in to see us & we have some solutions for you. From curing through to storage, we have you covered. Here are a few essentials to help you out with your mountain of Olives. 

These wide neck Demijohns have been a godsend this month as they are filled to the brim with Olive's in thousands of homes. 

Now the Olives are ready to package, put them in a jar from our preserving range. I love these Weck jars & can highly recommend them. 

~ Cade's Brew News ~ 

Good Beer Week is done & dusted, and all over Melbourne brewers, drinkers & livers are all letting out a huge relieved sigh. They somehow scraped through another one.

On Saturday 20th of May I was up early, milled some grain & loaded the car with all we needed to make some beer. Locked & loaded, I headed off to one of the craft beer meccas (not to mention those amazing Philly Steaks) of Melbourne, The Catfish. It was the annual Catfish Live Brew with the Merri Mashers Brew Club. Making it extra special this year was the fact that we two pro brewers from Portland, Oregon in attendance. Ben Edmunds from Breakside brewery & Sam Peccoraro from The Commons brewery, answered many questions from punters & home brewers alike & even mashed in on the day. We brought out the Camurri Brauer for it's first public outing & it made brewing & clean up a breeze. We ended up with a nice roasty Oatmeal stout & look forward to trying it when it's fermented and conditioned.

  

Speaking of Mashers, two Gypsy brewing labels whose members originally met as they passed around their home brew at Merri Masher meeting had their beers on the coveted containers at GABS last weekend. This was a chance for the Old Wives Ales & CoConspiritors to take on the big boys with some really creative beers.

 

 

We are seeing a fresh batch of White Labs in early next week, as well as a small selections from those purveyors of funk, Yeast Bay. Watch our social media channels for up to date new on when these hit our fridges, as some of these fly out faster than we can out them in ! 

We have just received a whole lot of hops, and have been super busy packing them down into home brew sizes. We are also happy to include the new 1kg bulk size into a few of our most popular varieties. We now sell Citra, Mosaic, Cascade, Galaxy & Saaz in these bigger portions & they will offer you alot more value on brew day.

Homemade Food Festival

In a couple of weeks Darebin throws it's arms open to all those home makers & people wanting to learn as it hosts the 2017 Darebin Homemade Food & Wine festival. This festival will showcase food & wine making traditions from all walks of life throughout Darebin & indeed the globe. Look forward to a supper from Syria, Kimchi from Korea, Roti from Mumbai & Momo's from tibet to name just a few. 

The Home Make It team will be showing it's wares in a few different ways during the festival, so get out your calendar, clear it & read on....

An on site Home brew in the Northcote Town Hall Civic Square from 1pm on Saturday 3rd June.  A free demonstration on how to make Pancetta/Capocollo on Saturday 3rd June at 2pm at the Northcote Town Hall, & lastly our Salami Making Masterclass at midday on Sunday 4th June at the Northcote Town Hall. Home Make It is teaming up with James from The Meat Room for this masterclass, and it is a ticketed event, please make sure you get in early if you are interested. These tickets will go quick ! ~ Cade's Brew News ~

Over the Easter break I took a Camurri 23 litre Brauer unit home to lay down a couple of brews & see what this stainless wonder could do. 

I first milled up one of our Red IPA grain kits, then set to work programming the desired temperature & time for my recipe. 

 

 

The Camurri then set to work, using it's mash agitators to extract as much sugar out of the grain as possible. I then raised the basket to drain & sparge over the grain bed. 

 

Fresh hops & bigger sizes. A super fresh crop of a few favorite hops has just landed, and will be in stores fridges very soon. We are also just about to start selling a select few of our biggest sellers in Bulk bag sizes, that gives you more bang for your buck. Look out for our 1 kilogram bags soon in store !

Talking about Good Beer Week, our good friends at The Craft & Co have an amazing night planned on Monday the 15th May. They have fermented a beer in an ancient clay vessel called an Amphora. Amphora's have been used for thousands of years for fermentation & it adds a distinct aroma & flavor impossible to get otherwise. This beer unveiling is matched with a 5 course feast & other bespoke beers brewed on premises. Book here if this unique night sounds like your thing.

Tomatoes done, Now for The Grapes !

~ Grand Day of Passata in Northcote ~

On Sunday 19th March we headed down early to All Nations Park in Northcote for the annual Melbourne Tomato Festival. A fine Melbourne day greeted the thousands that came down & it was wonderful to see young & old enjoy all that was on offer. The Home Make It team were doing hands on Passata making all day & nearly a thousand people cut, pulped & bottled Passata with us. We nearly got through 2 tonnes of nice red Roma tomatoes on the day & cannot wait until next year. Here a few of the moments from a wonderful day.

Last month Merri Mashers hosted it's IPA Competition, with IPA's flying in from every corner. Julian Robinson from the Merri Mashers walked away with the Home Make It choice award for his exceptional Red IPA. Home Make It & our good friends at Craft & Co wanted to offer a special prize, so we are going to brew Julian's Red IPA on the 1000 litre brewhouse at Craft & Co. in May. Look out for this dark, hoppy beast on tap in June. Well done Julian !

Long Weekend of Making

~ The Perfect Long Passata Weekend ~

This weekend brings together two important ingredients for a day of making. The tomatoes are super ripe & in - we have the Labour day long weekend. If our conversations in store with customers are anything to go by, thousands of families will getting together and slicing, dicing, plunging & boiling this weekend. We are open Saturday (9-3pm) & Sunday (9-1pm ) so if you run out of bottles, caps or your machine has finally given up the ghost..we'll be here to supply you with your needs! 

 

Don't forget we are less than two weeks away from the  Melbourne Tomato Festival in Northcote. We will be doing free hands on Passata making workshops all day, where you will get to take your own Passata bottle home!  Don't forget to grab your ticket here and we will see you there.   

~ Making Makes your Day ~

 A couple of weeks back the family was struck down and housebound with the Flu. We were all feeling quite sorry for ourselves. I had an plan. Our garden was full of cherry tomatoes & basil.  We would start from scratch & show the kids how to make our own bespoke pizza's. We had made some Passata the week prior & we went full steam ahead from there....

Next up some Mozzarella. Super easy using only milk, Rennet & Citric acid. 

Next up the kids made easy work of the pizza dough. 

The charocal oven is hot & Pizza is ready to go in. 

All ready to eat & it didn't last long ! 

 

~ The Grapes Are Nigh ~ 

We have started to get customers coming in excited & telling us they have had the call from their suppliers that their grapes are nearly ready. Over the next few weeks they will need all sorts of yeasts, cleaners, crushers, Fermentation vats & Stainless steel tanks. Don't forget we also offer wine tests to best gauge what your wine needs to be at it's best. The tests are free, but we do ask for a gold coin donation to help us keep up to date with our testing equipment. If you are a first time wine maker and are a bit unsure of where to get some quality grapes, just drop in or give us a call & we can recommend a starting point for you.

~ Home Make It Road Trip to Festival Land ~ 

Last Sunday the Home Make It team packed it's bags & jumped in our cars to travel to two festivals. Team 1 headed down to Mirboo North to the annual Mirboo Italian Festival  to show our wares & do some Passata making demonstrations for the public. Team 2 headed to the Clayton Street Festival to show our wares & get hands on with Passata & Sausage making demonstrations. Both Festivals were a real treat to be part of, & we met alot of new faces. A huge thank you to the organisers of both days for having us !  

 

~ Melbourne Tomato Festival & Passata at the Preston Market ~

 

We are a month away from Melbourne's biggest celebration of the almighty Tomato, the Melbourne Tomato Festival (or MTF if you are texting or time poor). This Saturday we head to the bustling Preston Market to team up with Guy Grossi for some live demonstrations. We kick off at 10.30am, so come down, pick up some tips from Guy or just wander over for a chat. 

If you haven't already secured your ticket for the MTF, head over here for your tickets. It is always a great day for young & old. 

 

~ All Your Passata Needs ~ 

The tomatoes are nearly hitting that ripeness sweet spot, and makers everywhere are soon going to start purchasing their boxes of Roma's. We are all stocked up with all the goods you need to turn all those tomatoes into a cupboard full of bottled Passata. 

Our new table machine is an amazing little Passata workstation. Limited stock, so get in quick.  

Make getting the sauce into your bottles a lot easier with these new 10 litre filling bowls. These come with a filling nozzle, which saves time & spillages.

We have pots ranging from 40 to 120 litres for boiling your sauce & your bottles.

These 4 ring burners will get any pot on the boil in no time.

As we did last year, we the team over at CERES fair food with their Crowdsaucing initiative. You organise family and friends to get together, and they will supply local organically grown tomotoes to you. The rest is up to you ! ~ Learn to Make Wine with Us ~ 

The grapes are nearly ready to pick here in Victoria, and if you have always dreamed of turning some quality grapes into a wine one day..we can help you. Our Advanced Wine Making courses are starting shortly ( March ). This hands on course runs you through the process in detail from grape to bottling your creation, all the problems in between & how to fix them. There are a few spots left, so jump onto it while you can.

Exciting news on the brew front with Home Make It taking delivery of the brand new brewing range from Camurri in Italy. Camurri is one of Europes biggest commercial beverage equipment suppliers & the build quality is second to none. We have brought in a few sizes of their all electric brew systems, but we'll look at the 23 & 50 litre units today. These Italian stainless steel beauties have a programmable controller that allows full temperature control & step mashing. There is also a mash agitator inside the stainless steel mesh basket which increases sugar conversion greatly. These units have two electric elements to ensure a stable mash temperature & a nice vigorous boils as well. Expect to see these in stores next week. 

We have brought in stainless steel conical tanks in 3 sizes, 50, 100 & 200L. These tanks feature a dump valve at the bottom of the conical & a stand.

Festivals & Tomato Jam

~ Melbourne Tomato Fest ~ 

From what we have seen in our gardens, to what we have been hearing in store from our customers, the Tomato's are a tad slow this year. But be patient, they will come ! On March 19th they will be in abundance at Northcote's All Nation Park as the annual Melbourne Tomato Festival takes place. Fine food, drinks & mountains of Roma Tomatoes will be waiting for you & the family. So pencil the date in & come and join us in our free & day long, hands on Passata making marathon. ~ Road Trip To Festival Land ~

Next Saturday the 12th of February the Home Make It team is splitting up, then hitting the road to 2 amazing cultural Festivals. One half are heading down to Gippsland, to the Mirboo North Italian Festa. A day packed full of Italian food, wine, comedy and activities awaits all that come. Entry is free, so bring all the family & friends.

The other half of the team are stopping in Clayton for the Clayton Street Festival. This a celebration of all cultures, and features food, dance & music from all over the globe. We will be hosting a pop up store, and doing some hands on Passata & Sausage making demo's from 12 onwards. Feel free to pop down & say Hi. 

 

~ Carla's Tomato Jam ~ 

Tomato's are not all about Passata, and after a chat today in the office I have sourced a tried & true recipe from one the HMI team. With a glut of our little ripe red friends on their way soon, put some aside & whip up this simple gem of a recipe from Carla. You won't regret it. 

Carla’s Tomato Jam Recipe

Ingredients:

1kg Tomato

500gm sugar

Cinnamon stick

One lemon

Method: 

Wash and dry the tomatoes.

Using a sharp knife, score the bottoms of each tomato in a cross, then plunge the tomato into boiling water for about 20 seconds.

Remove skin and roughly chop the tomatoes.

Slice a piece of the rind from the lemons, about 80mm long.

Place the chopped tomatoes, lemon rind, cinnamon stick and the sugar in a large, heavy-based saucepan.

Stir over medium heat for 30 minutes or until the jam comes to the boil.

Reduce the heat and simmer, stirring frequently, until the jam reaches setting point. You might be looking at 1.5 hours of stirring time

When setting point is reached, allow the jam to stand off the heat for 15 minutes.

Remove any scum from the surface and ladle the hot jam into sterilised, warm jars. Seal and set aside to cool completely.

Enjoy.

 

~ Sauce in a Few Clicks ~

 

If you are doing relatively small runs of sauce making, or have a lack of space, then these machines are just the thing for you. In Stainless steel or Racing Red plastic, the "Click Click" (named after the noise they make) machines are a popular & cost effective solution to small scale Passata making.   

 

If you really love the idea of a small scale Passata operation, maybe our starter Tomato Sauce Kits are the thing for you? All you have to do to upscale is add more jars & you are set to go. Might even be the perfect Valentines gift for that DIY foodie making better half!

As with the Tomatoes, the grape harvest is still a little while away this year due to this ever changing climate. We do have some good growers we recommend each year, so if you are after some grapes for your home made Vino this year..drop us a line late next week & we should be able to point you in the right direction.

Today a tall attractive Red dropped into store. Not Christina Hendricks, but our very own Red IPA Fresh Wort. If you love a big IPA with a bit more of a malt backbone & some American hops, this one's for you. Simply pour, pitch & throw lots of hops at it & you'll have one your friends will be jealous of. We also have our Pale Ale & Session American Pale ale Worts in stock too. 

It's nearly time to re-order our liquid yeasts from TRUMP-land, so we need to make a bit of room & sell off our current stock. Can you help us please ? Until they are gone, all of our Whitelabs & Wyeast are 15% off in-store. These are all in date and most have about 2 months or just under on their use by dates.

Also new into store are the wonderful SS Brewtech False bottoms. These beauties are slightly domed to give a very small dead zone under the mesh & come with a connector set to connect to your SS Brewtech Boil Kettle port ( where the trub dam & pick up usually sit ). We currently carry the false bottoms for the 57 & 76 litre kettles. We only have limited stock, so get in quick if you want to turn your kettle into a mash tun :)
