~ Change in Opening Hours ~

Now that 2018 has kicked into full " making mode " Home Make It has extended it's trading hours. From this Saturday and all through the year, we will be open from 9am to 3pm every Saturday. More time to test wine, talk recipes & solve any issues with your produce. Please note, we will not be trading on Sundays. 

 

~ Labour Day Holiday ~

 

Please be aware that Home Make It stores will be closed for the Labour Day public holiday on Monday the 12th of March. Making is a hard but rewarding job, sometimes we need to just sleep in! 

~ The Tomatoes Are In ~ 

From what we are hearing this weekend is going to be a huge sea of red. Skins & seeds will be flying & drums will be coming up to the boil while family & friends frantically tighten lids. Passata time! Every day we have multiple customers fly in the door in a mad panic. Sauce day is underway & they've forgotten the bottles or lids, need an extra burner or pot. So please, check your lists & come in before the day to get your Passata supplies. See you soon.

 

~ Tomato Day ~

On Saturday the 10th of March, 2018 our friends at The Craft & Co Farm are having a celebration of the Tomato. Roll up to the lovely vinyard surroundings & be ready to go hands on in this Passata fest. All participants will take home a bottle of the red gold after each session. Workshops will be held at hourly intervals from 11am to 2pm & spaces are first in, first served.  Register at the Home Make It stall.  And why not make a day of it, with the kitchen cooking tomato themed dishes all day & even the bar serving up some delicious bloody mary's. For times & bookings for lunch, head over to their Facebook page. There will also be live entertainment in the marquee from 1pm, with the fabulous Richard George, acoustic singer and guitarist.  

 

 ~ Vino ~ 

The sun, soil, water & vines have conspired again to give us the grapes we need to make this year's Vino. From what we have seen & tasted so far the grapes are fantastic, with good acidity & sugar levels. Just remember the golden rule, BUY GOOD GRAPES - MAKE GOOD WINE ( if you give us a call we can guide you to the right growers ). This rule will cost you a little bit more money, but save you a lot of time & heartache. Our wine tasters are polishing their hydrometers, calibrating their PH meters & preparing their taste buds as we speak, awaiting your home made wine for evaluation. For a small gold coin donation we will check your wine & use every ounce of our experience to help you get the best out of your grapes. And if you need any equipment or additives for your wine..we have it.  

 

 

 

~ Cade's Brew News ~

I'm an avid reader & I love a beer. So I was very excited when contacted by the Moreland City Council to hold a talk on Home Brewing in the grand old Brunswick Library. We had a great turnout & lots of laughs ( not to mention  samples ) were had before our time was up. A big thanks to the Brunswick Library for having us & the attendees for coming and providing an enjoyable evening.

 

In last years IPA home brew competition run by the might Merri Mashers Homebrew Club, we got together with our friends at The Craft & Co & offered to up-size the winning brew on their 1000 Litre commercial brew system. Well it definitely went well & Julian's winning Red IPA came out a treat. As part of their wonderful " Free Keg Friday's " offer, The Craft & Co will be putting on this hoppy monster this Friday from 5pm. Julian, the comp winner who's beer was " upsized " will be behind the bar pouring his beer as well. I'll see you there !

 

 

 After an amazing festive season where we pretty much sold out of every Fresh Wort Kit we had made ( good for us, but not for our customers ! ), we've been trying to get back on board & re-stocked. We have good stocks of Porter, Session Ale & IPA in stock at the moment and more to come shortly...including some new & exciting brews. Need some hops to dry hops these tasty cubes of malty goodnes ? We have them

Oh how home makers love this time of year ! The grapes and tomatoes are ripening, sheds and equipment all over are being cleaned. Whole weekends are locked away in our calendars with family & friends. It's time to make Wine & Passata.

Anytime now the Tomatoe Tsunami will arrive. A glut of soft , ripe Roma's that are destined for the Passata bottle.

We are installing something a bit smaller, so this needs a new home. It is a great unit, and really built to last. It has removable lauter basket ( lifted by included hoist ) 

 



The Nano Brewery is made up for the following;

  • 100 Litre Kettle with burner and gantry

 It's premium brewing & partaking ( research & development ) weather at the moment in Melbourne & there are couple of fantastic Home Brewing competitions coming up I want to point out. Even if you are not a member of a Home Brew club, entering one of these comps. is a  great way to gauge how your brewing is progressing. the judges are most often qualified & the feedback is very thorough. 

 

Beerfest is the creation of The Melbourne Brewers home brew club. It will be run on February 24-25th in Ferntree Gully. Even if you don't brew, get on down there for the Food Trucks, Homebrew demos & sampling of the judged beers. 

The Merri Mashers home brew club are holding their fabled IPA competition in March. These Northsiders hold a great competition with some amazing prizes on offer.  So grab your best home brewed effort & sling it into them by the close off date. Home Make it are a drop off point for the comp. Or simply head down to the Terminus on Sunday the 25th of March to partake in the raflle, taste the delicious Mashers collaboration beer brewed at Himmel Hund Brewery or just come & talk beer.  

On the ingredients side of things, we are very well stocked with grains, hops, yeasts ( dry & liquid ), and all sorts of hardware.

~ Mission Kabana ~

Here at Home Make It, when we get a new product in we make sure all is above board & works well. So when our fantastic new Kabana Recipe kits hit store, we had a mission...Mission Kabana! 

Our Kabana mix has all the spices & salt you need to mix with 5kg of meat. So I grabbed some of our small natural casings, and made a quick trip to our local butcher for some pork. A quick note that quality meat is the key here, find a good butcher & you're half way there. Once minced on my trusty Gahre manual mincer, I pulled on the gloves and mixed the spice mix through through. Next I filled my casings & started thinking about the next step...smoke.

  

I do a lot of smoking at home so I have a smoking cabinet at home, but getting some smoke on your Kabana any way possible is fine. As long as you get your internal meat temperature up to 72 degrees centigrade to get rid of any harmful bacteria. I cold smoked mine for two hours, then placed them in the oven at 110 centigrade for just under two hours. Once done, I rinsed then with cold water and let dry out. 

Now all I had to do was Vacuum seal my produce & I had amazingly tasty, smoky DIY Kabana that will keep for months ( they won't last that long ).

Last Sunday we were proud to be part of the wonderful Crafty Christmas Market at The Craft and Co. Home Make It had a Pop up Store on the day, perfectly fitting in with the  DIY foodie ethos of the Craft and Co. We met many great producers, familiar & new faces. A great day had by all.

Our Friends at the Frankston Wine Guild are a great place for Home Maker's to meet, talk wine & compare their own home made efforts. For any makers out there considering learning how to make wine, this may be of interest.

Our locally Made Fresh Wort Kits ( made at The Craft & Co ), are moving out the door as fast as we can make them. But fear not, we are ramping up production very soon & even adding some new recipes to the mix. Last week we whipped up a batch of Pale Ale wort, just in time for a XMAS brew. In store any day now.  

Our fresh new batch of White Labs fresh brewing yeast has hit our warehouse and will be in store by next week. Following closely behind it will be a small shipment of those lovely bugs from The Yeast Bay, for all those funky/sour beer fans. Watch our social media channels for when they hit store.

Rolling Into Summer

~ Pizza Perfect ~ 

As the weather warms up, we all flock outside to play, relax & eat. And what better way do all the above than a quality home made Pizza ? You start off making the dough, choosing your favourite toppings, rolling your base to your desired thickness, then assembling your masterpiece. Our Napoli electric Pizza ovens are perfect for an impromptu Pizza session. Turn the oven on & 5 minutes later you are ready to cook. In Ferrari red & new Matte Black, these stylish ovens will make your Pizza perfect. Look at our the rest of our Pizza range too, we have some great solutions to make your life easier.

Oktoberfest, summer & Wheat beers go together like honey & the bee. so here's a wonderful recipe for an American Wheat by Kyle from our Clayton store. Perfect fare on a hot Melbourne summers day. 

 

American Style Wheat - Similar to Widmer Hefewiezen and Boulevard Wheat

 

 

2 cans wheat liquid malt extract

 

 

25 grams Hallertauer hops Boil for 60 min

 

 

15 grams Cascade hops Boil for 15 minutes

 

 

10 grams Centennial hops : Add when you stop the boil 

 

 

Yeast :  Safale US-05

 

 

Method : Empty your extract cans into 4 litres of water & boil for an hour. Add the above hops for the advised boil time. Pour this into a fermenter & top up with cold water to 20 litres, stirring to make sure it is all mixed through. Add yeast,  close your fermenter & wait for the magic to happen. . 

 

Prehopped extract substitutions - If mixing from a kit there is no need for any kettle additions of the hops. Simply replace 1 can of the wheat liquid malt extract with 1 can of the prehopped Coopers, Morgans, or Muntons wheat beer tins.

Adding fruit puree to wheat beers has become increasingly popular. Mango, apricot, watermelon, cherry, blueberry and peach are good places to start. Simply add 1-1.5 kilos of pasteurized puree to the fermenter once fermentation has started to slow down. Fermentation should become more active again as the yeast ferments the fructose from the puree.

 

 

~ Sausage Time ~

On the 16th of September Vicbrew , Victoria's biggest amateur home brewing competition took place at the Belgian Beer Cafe in Southbank. Home Make It are proud to be part of such a fine annual event & this year we sponsored the American Pale Ale category. Kyle & myself also attended the event & helped out where we could. We both judged some wonderful examples of home brewed beer & the quality of entries were very high ! Well done to all the entrants, and the Vicbrew committee for running a great weekend.  

As brew season gathers steam, we have been busy beavers here at Home Make It packing down multiple hop varieties to pop into our fridges, then for you to pop into your next beer. this week alone we have unpacked Galaxy, Ekuanot ( formerly known as Equinox ), Citra & good old Fuggles.

Been There, Cured That !

This time of year my vacuum sealer is my best friend. It takes my precious cured goods & tucks them up neatly, making sure that they don't lose any freshness & allowing me to portion them in whatever serving size I wish. ~ Cade's Brew News ~ 

Spring weather is THE best brewing & fermenting weather, so we've put in a big order & have just received a slab of green gold (hops). Into our fridges soon will be fresh Fuggles, Galaxy, Ekuanot (aka Equinox), Hallertau, Simcoe, Amarillo, Centennial & the almighty Citra. 

We are slowly whittling down our White Labs stock & have minimal amounts of the Yeast Bay left in stock. Come & see us to secure the yeast that's perfect for your recipe. 

 

Beer from scratch ? Our all grain kits will start you off in the right direction. 

Our Fresh wort kits will save you time & still put a smile on any beer lovers face. 

This week a large container arrived from Finland, and boy am I excited!  We now have our new shipment of Viking Malt into our warehouse, including 9 new varieties to brew with. Here are the new Viking malts into store soon - Colorado Crystal, Colorado Pale Ale, Colorado Honig, Pearled Barley , Roasted Barley, Smoked Malt, Rye, Lightly Peated & Pot Still Rye. We should see these into store within a week or so, so watch out on our social media spaces to know more.
