~ Melbourne Tomato Festival 2016 ~

It's here! The Melbourne Tomato Festival has finally arrived! This Sunday, 21st February, 2016, the leafy green suburb of Eltham will be turned into a sea of red! Guy Grossi, his family and the Melbournese Movement pay homage to the humble tomato as a celebration and preservation of the Italian tradition of preserving tomatoes for their use throughout the year.

The Melbournese Movement defines our place, where Italian and Australian heritage come together and where food culture and traditions are ingrained as part of our identity. Rooted from generations before us, Italian culture is one that reflects its regions, produce and its people and their lifestyle. Melbournese is a movement, which preserves the strength, and pride of our Italian culture while evolving to create new traditions that respect our current home" (Melbournese Movement).

So today, you don't have to be born in Italy to be Italian or wish you were :) We can all be Italian for a day this Sunday at the Melbourne Tomato Festival and "National Italian Day", celebrating the humble tomato and all things Italian. There'll be Italian food and beverages, music, entertainment, guest speakers, farmers produce markets, celebrity chefs, a tomato growing competition, cooking demonstrations and hands on passata making workshops. 

The crew from Home Make It will be running back to back, hands on passata making workshops throughout the day, so be sure to get in early to book your spot. And please, come and say hello and introduce yourself to a member of the Home Make It team. We'd love to meet you! 

The Melbourne Tomato Festival will be held on Sunday 21st February, 2106 at Edendale Farm in Eltham between 10am - 4pm. Tickets available for pre-purchase only until sold out. You can purchase your tickets ONLINE. The inaugural Melbourne Tomato Festival was a sell out last year, so avoid disappointment and purchase your tickets now! Adults $25, Children 6-13 years $10 and Children 5 & under FREE.  

It's promising to be stunning weather this Sunday, so hop on your bike or catch a ride in on the train or bus. Parking is available, however will be limited.

The article features our very own Cade Butler and his lovely wife Bonnie Halliday.Their passion for homemade produce has been dubbed as "saavy DIY hipsters", and much to Cade's horror they are creating new traditions in their family making passata, salami and preserving olives. It's a family affair proving you don't have to be born in Italy to make Italian food and drinks!

The article also features the upcoming CERES Fair Food, community Crowdsaucing Day on 30th April, 2016 in neighborhoods all over Melbourne. Crowdsaucing Day is an opportunity for communities to come together to bottle locally grown and organic tomatoes to be used throughout the year. If you can't get along to the Melbourne Tomato Festival this Sunday you can join us at The Craft & Co on Sunday 6th March, 2016 for the  Craft Day Out where we will be running more passata making workshops throughout the day.

The Craft Day Out is a unique "foodie" event as part of the Melbourne Food & Wine Festival. And what a day out it will be! ~  Cade's Brew News ~

Hi Brewers, I can't believe it's almost the end of February already, so much to tell and on the horizon!

 

I was like an excited kid at Christmas when we received some new and fresh hops from the Crosby Hop farm in the USA. We got in Cascade, Chinook, Columbus and a couple of experimental hop varieties: Idaho #7 and Idaho #6. So if you want some fresh big USA hops for your next recipe, you know where to go!   

Along with those we have an extensive range of Wyeast and Whitelabs pure pitch yeast. We even have a few sour beer inducing Lacto & Brett bugs in there too for those adventurous brewers out there.  

Starting at our Reservoir store soon, we will be expanding our equipment hire range to include an all grain brewing kit. The amazing SS Brewtech Mash Tun & 38L kettle, this will convert any extract tin brewer to the All Grain side of the force in a single afternoon.  

Home Make It are proud to team up with Melbourne's newest brew club, the Merri Mashers and fab new venue The Craft & Co to bring you the BREW FC Competition. This is a home brew comp with a difference, instead of brewer vs brewer this is club vs club! We are pitting Melbourne's best brew clubs against each other in a test of Stouts & Porters for a chance to win bragging rights and a chance to win a tap takeover at The Craft & Co. It's that time of year again when Melbournian's pay homage to the humble tomato thanks to the passion and vision of Guy Grossi, his family and the Melbournese Movement. The iconic Melbourne Tomato Festival, now in its second year and growing in popularity and magnitude, is quickly becoming one of Melbourne's most popular culturally driven foodie festivals. 

The Melbourne Tomato Festival will be held on Sunday 21st February, 2106 at Edendale Farm in Eltham between 10am - 4pm.

The festival is a celebration of the humble tomato and the preservation of Italian food, traditions and customs and authentic cooking. The Melbourne Tomato Festival will play host to a gathering of local farmers selling their produce, celebrity chefs, guest speakers, agriculturalists, demonstrations, workshops, artisan food and wine, and entertainment. Check out our top 5 gift ideas this festive season;

5 - Vinegar Making Demijohn 

The beauty of this "gift of giving" is that if you keep up the wine additions, the red or white wine or balsamic vinegar never runs out! The mother culture will continue to improve with age. Your friends and family will be so appreciative that they'll keep you in a lifetime supply of homemade vinegar. How good does that sound!  

I'll share with you the vinegar recipe as featured in our first ever book, titled The Makers, by Rita Erlich. This is the recipe of Lou Baggio, the original founder of Home Make It, who knows that not everyone has the time to make real vinegar the old fashioned way, but understands that people still want good quality vinegar to enjoy with their salads and as a stable in their kitchens. So here is his vinegar recipe with a modern twist.  

Homemade Vinegar Recipe

Ingredients:

  • 750 ml wine (red or white) 
  • 250 ml sterilised water (boiled then chilled) 
  • 1 jar of mother vinegar - 'starter' culture
Equipment required:
  • Demijohn with a wide neck and stand or large jar with spigot on its own stand 
  • Tea towel or gauze 
  • Wooden blocks for ageing effects (optional)

Method:

  1.  Pour 750ml of wine (red or white) into the jar 
  2. Add 250 mls of sterilised water. The water will lower the alcohol content and ph level to 3.8-4, which will allow the bacteria to grow.  
  3. Add the jar of mother culture 
  4. Add the wooden blocks to approximate the effects of wood-aging (optional) 
  5. Cover the jar or demijohyn with a tea towel or gauze. This will allow the mixture to breath and the bacteria to grow. 
  6. Keep the vinegar somewhere warm to get it to over 24 degrees, which will enable the bacteria to grow. It will take around 6-8 weeks for the vinegar to be ready, less time in warmer weather.   

TIP: 
Once you've made the vinegar, you don't want it to run out. Continue with wine 'additions' whenever you draw the vinegar i.e. if you take 200ml of the vinegar, replace with 150ml wine and 50ml of sterilised water. This will keep the mother culture going. The vinegar flavour will improve with age if you keep the additions going.

 

4 - Cheese Making Kits

Who doesn't love cheese! Whether it's Ricotta, Feta, Halloumi, Blue Vein, Camembert or Mozzarella, we can never get enough. The passionate foodie will love trying their hand at homemade cheese making and the process has been made simpler with these awesome Cheese Making Kits. ~ Cade's Home Brew  News ~

Hi Brewers, 

We have had a big pre-xmas shipment of big boy toys come into us this week and I'm excited! 

This is the interior of the new SS Brewtech Infussion mash tun. Has to be seen in the flesh and picked up to be truly appreciated. It's built like a tank. We have also got the 38, 57 & 76 liter SS Brewtech Kettles back into stock, so include those on your Santa wishlist. To add to this, these are 20% off too for a limited time, it's a no brainer! 

 

We had a wonderful time with James Mele at The Meat Room in Kilmore last weekend. With our powers combined we gave a "Beer & Bangers" experience for some lucky customers. As well as learning the processes, they took home the fruit of their labours, with everyone hauling away their own handmade sausages and beer bottle by their own hand. A good day had by all!

It's finally arrived! Home Make It's very first book, The Makers: A Story of Food, Family and Foreigners is now available for purchase at either our Reservoir or Clayton Store, and ONLINE. The Makers, written by acclaimed food writer and journalist, Rita Erlich tells a story of European migration to Australia and the influence on Melbourne's food and beverage culture. The book includes the history behind Home Make It and shares stories, recipes and processes from the Home Make It community. The Makers is a celebration of food and beverage traditions including passata making, salami making and wine making. We hope you'll enjoy it.
  

We were delighted to officially launch the book last Wednesday night at The Craft & Co in Smith Street, Collingwood.  Hi Brewers, 

Busy times indeed in the Home Make It brew department! We have had the new to Australian shores Viking Malt hit the stores. Add to that this new "grain station" (pictured above) that we have set up in stores; we are now ready for any recipe you brewers throw our way! We also do the Viking Malt in sacks too at really good prices, call our stores for availability. 

And last but not least, we are seeing a new shipment of SS Brewtech hardware in any day now. As well as stocking up on brew kettles, we will finally be seeing their lovely new 38L Mash Tun. I can see this in my set up too!

If you were part of the festivities last weekend at the Melbourne Salami Festa, then you will agree that this year's festa was second to none. A great event with an all-round warm and fuzzy buzz, showcasing a perfect blend of traditional and modern Italian-styled things to experience, learn about, buy, see and eat.

It is so great to see the Melbourne Salami Festa reaching new heights each year with an ever-growing "hungry" fan-base and followers. Home Make It are very proud to be part of it all!

It's a busy time in brewing land, with a few big changes in our stores. It's my pleasure to announce that Home Make It will see the first shipment of Viking Malts next week! Preserving Springtime

~ Preserving ideas ~

Springtime evokes the desire to preserve the sweet fruit and vegetables that have been in abundance such as strawberries, pineapple, melons, mandarins, rhubarb, blood oranges, beetroot, spinach and artichokes. Preserving our favourite foods means we can keep enjoying the goodness of these fruits and vegetables long after the harvest is over. Traditional preserving methods include canning and dehydrating. But the quickest and simplest way to preserve fruits and vegetables is freezing.  

I found this wonderful blog by The Kitchn, that features simple tips for preserving. One is as simple as freezing fresh herbs in olive oil. How good do these look! TIPS FROM THE KITCHN

 

If you're feeling inspired, check out The Kitchn's blog 10 Ways to Preserve Summer Fruits & Vegetables without Canning. There's some great tips on making pesto, fruit vinegar, freezing Summer fruits and roasting tomato sauce and garlic.

The SALAMI season is here!

Ever wanted to be a fly on the wall at someone's salami day? Well here's your chance :). Check out the YouTube clip from the winner's of the inaugural 2012 Melbourne Salami Festa, BGS Group (Bloody Good Salami) for their "best homemade salami". The BGS Group are a group of cousins from the North Eastern suburbs. Their salami day helpers comprises of three generations and it's all hands on deck, commencing just before sunrise and finishing well after sunset. Pot belly stoves are lit, coffee is made in the traditional caffettiera and bacon and egg rolls are cooked on the grill. They feast on a lunch from off cuts of the pigs which is transformed into a slow cooked pork pasta ragu`. The long trestle tables are be adorned with cheese, last years salumi, red wine, salads and crunchy bread.

The mincer machine is drowned out by the sounds of children's laughter and cheeky antics as they come in and out to offer small bouts of assistance. The uncles are quick to criticise the next generation and make comparisons of their own traditional methods of making salumi. Fortunately, this is mostly done in jest so the mood of the day is light and jovial.

18 hours later, there is enough salami and fresh sausages to last a year for all the families present. Notes are taken, ingredients measured and processes documented, in the event that they win or place again in the Melbourne Salami Festa competition, so that it can be replicated the next year. This group like so many families around Melbourne absolutely love their annual salami day! It's not just about creating homemade salami and fresh sausages, it's also about enjoying time together as a family, preserving traditions and creating life long memories for their children.  

~ Frank's Hot Italian Salami Recipe ~ 

For those that have already joined the "salami army", and been to one of our food & beverage courses, then now's the time to transform your suburban garage into a salami and sausage making factory! Try out Frank Bovezza's hot Italian salami recipe below, he's not shy in proclaiming it to be "the best"!  

Ingredients

- 1 kilo pork

- 28g - 30g fine sea salt (if using a curing compound, reduce salt to 18-20g)

- 5g sweet paprika

- 3g chilli flakes

- 1g cracked black pepper

- 20ml hot pepper sauce

- 30-50ml sweet pepper sauce (depending on dryness of the meat)

- 30-50ml red wine (depending on dryness of the meat)

- intestine or casing

~ Cade's Home Brew News ~ 

Hi Brewers,

It’s been a busy time indeed here in the Home Make it beer world! Firstly, we had a nice sunshine filled home brew demo on my backyard deck. A nice winter warming dark ale was made (recipe below) and it will be ready for tasting in about a month, cannot wait!

We also headed over to see Christina's (editor of The Great Aussie Bite) beer, who wanted to make some beer. Being her first time, she and a friend each put together a Home Make It beer kit and the “battle of the beers" was on. Can’t wait to taste these battling beers! 

Speaking of battle of the brews, the Merri Mashers Brew Club held the worlds first ever "speciality IPA" beer comp at the Terminus on Sunday 14th June. Over a hundred beers from all over the country arrived and were judged. Very happy to say, a local Merri Masher member won the Home Make It sponsored White IPA section and I’ll be handing over the store voucher to Mattias at the next meeting. Congrats Mattias! 

On a store level, our grain offering is looking great. Be it full 25kg sacks of base grain, or little bags of Gladfield speciality malts, we have it. We have a new batch of White Labs liquid yeast hitting us late next week also, and good stocks of the shiny and wonderful SS Brewtech fermenters and boil kettles and new amazing STERILOCK waterless airlocks.

The end of the olive season is nearly here, so don't delay if you are wanting to try your hand at olives in brine.  

Here's a family recipe you may like to try:  

 
  1. Pick the olives fresh from the trees if possible, but olives from the markets would be fine (or side of the road where they sell grapes for wine making season).  
  2. Make a cut length way on each olive with a sharp knife.  
  3. Place in a bucket with fresh water and then change the water each day for 7 days.  
  4. Make a brine using 100 grams of salt to each litre of water (the water level should just cover the olives).
  5. Bring the brine to boiling point.  
  6. Allow the brine to cool for 5 minutes.
  7. Place the olives in sterilised sealable jars.
  8. Cover with the brine, seal and leave for 1 month.
  9. Before using a jar of olives, wash off the brine, cover in olive oil, add fresh garlic, fresh rosemary, and leave over night for the flavours to go through the olives.

(Fennel or fresh chilli are also nice flavours. Always keep the jars topped with olive oil to cover the olives). Enjoy!

~ Rose Creek Estate Open Day - Last Sunday in August 2015 ~

I had the pleasure of visiting the Rose Creek Estate in East Keilor a couple of weekends ago. Rose Creek Estate produces award winning wines and olive oil, not to mention the most amazing vegetable garden and fruit orchard I have ever seen!  Spread over 7 acres and hidden away in the heart of the northern suburbs, Rose Creek Estate has been dubbed  " A bit of Tuscany in the Keilor East". I'm sure I am not the only person who has arrived at the address 2 Craig Street, East Keilor only to think that I'm at the wrong place! How could a vineyard and olive grove be tucked behind a suburban house in a suburban street in Keilor East? But I kid you not! It exists! Tony and Lina Siciliano have created an Italian country lifestyle with all the Italian food and beverage traditions imaginable.

What a massive week in Australia’s beer scene! The Australian Craft Brewers Conference (CBIA) and then onto GABS for a showcase of craft beer from all corners.

On the Home Make It side, we have Gladfield Malt now adorning our shelves in stores. This malt comes from a small scale boutique malt producer in New Zealand and is all the rage in the craft brew scene.

By popular demand, we now have 25kg bulk bags of base malt grains in both stores now for the big time, super organised brewers who want to buy in bulk, or split the costs with mates or clubs. Also just in, is the STERILOCK airlock for home brewing. A sturdy non-water airlock that can also have an odour remover attached. Very handy!

    Hello all ,              

    Busy week in beer land, with the SS Brewtech range hitting stores and now available online as well. To continue the beer making story right to the end, we now are carrying 19L Cornelius kegs instore and online to dispense all of your beer goodness. These can be carbonated with the Brewmate CO2 bottles we now carry also, how convenient!  

     

    On the ingredient side of things, the hops fridge is bursting with a HUGE variety of hops, our White Labs range is extensive and our grain range is ever growing. As well as the pre-packed bags of grain we do, we will now be offering a select range of base grains in 25kg sizes for those brewers who like to buy and brew big. Please call our stores to check availability.  

     

    On a personal note, I brewed a dark IPA last week that I will be entering into a speciality IPA competition in June at the Terminus in Fitzroy. Some 2Row, wheat, crystal and chocolate grains plus mountains of Summit, Amarillo, Cascade and Centennial hops went into this black beast, and will be finished off with some oak chips before bottling. This competition is the first run by the Merri Mashers, a wonderful brew club we work with. So if you’re a home brewer and do a decent IPA , round up all your hops and come along to sign up. Should be a great day!

    ~ Vintage 2015 ~

    Feedback from our team at Home Make It suggests that that 2015 Vintage has been one of the best vintages presented at our testing counters for some years. Our testing counters offer complimentary testing of juice/wine samples at all the stages of the wine making process, including crushing, pressing, racking and bottling. They attribute the high quality of samples they have analysed to our customers' purchasing good quality grapes. I'm sure you have heard members of our team preach to our customers "if you want to make good quality wine, you need to start with good quality grapes"! It seems our customers are listening, with many customers now purchasing their grapes from many of the suppliers that we have recommended as reputable wineries or grape suppliers. We would like to take the opportunity to thank the many wineries and grape suppliers that have supported our customers with exceptional quality grapes and service. Some of these wineries include;
